A cozy, elegant December recipe using the Hungry Artisan Food Mill
December is the season of warm spices, hearty produce, and creative kitchen magic, and this brand-new Winter Spiced Parsnip Pear Sauce is the perfect way to bring comfort and sophistication to your holiday table.
Creamy, lightly sweet, and beautifully fragrant with nutmeg and cardamom, this sauce pairs with everything from roasted poultry to waffles. Your Hungry Artisan Food Mill transforms fibrous parsnips and soft pears into the smoothest, silky purée without any peeling or straining.
Ingredients
-
3 large parsnips, trimmed + chopped (no peeling needed)
-
3 ripe pears (Bosc or Anjou), quartered (no peeling or coring)
-
1 small onion, halved
-
1 cup water or apple cider
-
1 tbsp butter (optional for richness)
-
1 tsp lemon juice
-
⅛ tsp ground nutmeg
-
⅛ tsp ground cardamom
-
Pinch of salt
Instructions
1. Cook the Base
In a large pot, combine parsnips, pears, onion, and water/cider.
Simmer 20–25 minutes, or until everything is fully tender.
2. Mill to Perfect Smoothness
Run the mixture through your Hungry Artisan Premium Food Mill using the medium disc for a velvety, creamy texture.
(The food mill will automatically separate pear seeds, skins, and parsnip fibers, giving you a restaurant-quality finish.)
3. Season & Warm
Return the purée to the pot.
Stir in butter, lemon juice, nutmeg, cardamom, and a pinch of salt.
Warm for 2–3 minutes.
4. Serve or Store
Serve warm as a side dish, spoon over roasted turkey, or use as a base for winter soups.
Refrigerate up to 5 days or freeze for 3 months.
