 Ingredients (yields ~4 half-pints)

  • 4 cups roasted pumpkin flesh (not canned)

  • 6 Medjool dates, pitted and chopped

  • 1 cup apple cider

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp clove

Instructions

1. Cook the Base:
Combine pumpkin, dates, cider, and spices in a saucepan. Simmer for 15–20 minutes until dates soften.

2. Mill for Smoothness:
Run through your Hungry Artisan Food Mill (fine disc) to achieve a silky, spreadable texture.

3. Return to Pot:
Simmer another 10 minutes to thicken. Stir in lemon juice.

4. Jar & Process:
Ladle hot butter into sterilized jars using your Hungry Artisan Funnel, leaving ¼-inch headspace.
De-bubble, wipe rims, and process in a boiling water bath for 10 minutes.
