Ingredients (yields ~4 half-pints)

4 cups roasted pumpkin flesh (not canned)

6 Medjool dates, pitted and chopped

1 cup apple cider

1 tsp cinnamon

½ tsp nutmeg

¼ tsp clove
Instructions
1. Cook the Base:
Combine pumpkin, dates, cider, and spices in a saucepan. Simmer for 15–20 minutes until dates soften.
2. Mill for Smoothness:
Run through your Hungry Artisan Food Mill (fine disc) to achieve a silky, spreadable texture.
3. Return to Pot:
Simmer another 10 minutes to thicken. Stir in lemon juice.
4. Jar & Process:
