Ingredients (yields ~5 half-pint jars)

  • 2 large eggplants

  • 1 red bell pepper

  • 3 cloves garlic, unpeeled

  • 2 tbsp olive oil

  • ¼ cup apple cider vinegar (5% acidity)

  • 1 tbsp lemon juice

  • 1 tbsp chopped parsley

  • 1 tbsp chopped basil

  • ½ tsp smoked paprika

  • ½ tsp salt

¼ tsp black pepper

Instructions

1. Roast the Vegetables:
Preheat oven to 425°F. Place whole eggplants, red pepper, and garlic cloves on a parchment-lined baking sheet.
Roast for 25–30 minutes, turning occasionally, until skins are charred and vegetables are soft.

2. Prep for Milling:
Cool slightly. Peel the eggplant and red pepper; squeeze roasted garlic from skins.

3. Mill for Texture:
Run the roasted vegetables through your Hungry Artisan Food Mill (medium disc).

4. Season & Simmer:
In a saucepan, combine the purée with olive oil, vinegar, lemon juice, herbs, paprika, salt, and pepper.

5. Jar & Process:

Process jars in a boiling water bath for 15 minutes (adjust for altitude).

6. Cool & Label:
