Earthy, rich, and deeply umami, this Savory Mushroom & Walnut Tapenade is a small-batch preserve designed for the modern pantry. Spread it on toast, swirl it into pasta, or use it as a flavor booster for sauces and soups.
With your Hungry Artisan Food Mill, you’ll achieve that perfect, spreadable texture without the grit or chunkiness of a food processor. Your 8-Piece Canning Kit takes care of safe, mess-free preserving.
🛒 Ingredients (yields ~4 half-pint jars)
-
1 lb cremini or baby bella mushrooms, cleaned & quartered
-
½ cup walnuts, toasted
-
1 medium onion, chopped
-
3 cloves garlic, peeled
-
3 tbsp olive oil
-
2 tbsp balsamic vinegar
-
½ tsp thyme
-
½ tsp salt
-
¼ tsp black pepper
-
¼ cup dry white wine or broth
Instructions
1. Sauté the Base:
Heat olive oil in a skillet. Add mushrooms, onions, and garlic. Cook 10–12 minutes until soft and browned. Deglaze with white wine or broth and cook 2 minutes more.
2. Mill for Texture:
Run the mixture through your Hungry Artisan Food Mill fitted with the medium disc for a coarse, rustic tapenade or the fine disc for a smoother spread.
3. Add Flavor Depth:
Stir in toasted walnuts, balsamic vinegar, thyme, salt, and pepper. Mix until fully combined and glossy.
4. Jar & Seal:
Use your Hungry Artisan funnel to fill sterilized half-pint jars, leaving ½-inch headspace. Remove air bubbles with the measuring tool, wipe rims, and apply lids using the magnetic lifter.
5. Process & Store:
Process in a boiling water bath for 15 minutes. Cool 24 hours, check seals, and label with date. Store in a cool, dark place.
