Ingredients:

  • 3 lbs ripe plums, halved and pitted (no need to peel)

  • ½ cup water

  • 1 ¼ cups sugar (adjust to taste)

  • 1 tbsp lemon juice

  • 2 whole star anise pods

Instructions:

1. Simmer the Plums:
In a large pot, combine halved plums and water. Simmer over medium heat for 15–20 minutes until the fruit is soft and breaking down.

2. Mill for Smoothness:
Run the mixture through your Hungry Artisan Food Mill using the medium disc. The mill removes skins and pits, leaving behind a silky, fruit-only purée.

No peeling or straining needed, just smooth, seedless plum butter with minimal waste.

3. Add Flavor & Thicken:
Return the purée to the pot. Add sugar, lemon juice, and star anise. Simmer uncovered, stirring frequently, for 45–60 minutes or until thickened to your liking. Remove star anise pods before jarring.

4. Store or Can:
Pour hot plum butter into sterilized jars, leaving ¼-inch headspace.
