3 lbs yellow tomatoes, halved

1 medium fennel bulb, trimmed and chopped

3 cloves garlic, peeled

2 tbsp olive oil

1. Roast the Veggies:
Preheat oven to 400°F. Place tomatoes, fennel, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 30–35 minutes until softened and lightly caramelized.
