Ingredients (yields ~4 cups)

2 lbs parsnips, peeled and chopped

1 bulb garlic, roasted

2 tbsp olive oil

½ cup heavy cream or plant-based milk

½ tsp salt

¼ tsp black pepper

1 tsp lemon juice
Instructions
1. Roast:
Toss parsnips and garlic cloves (skin on) with olive oil. Roast at 400°F for 25 minutes until golden and soft.
2. Mill:
Pop garlic from skins. Run roasted parsnips and garlic through your Hungry Artisan Food Mill (fine disc) until creamy.
3. Finish:
Whisk in cream, salt, pepper, and lemon juice. Adjust seasoning.
