🥕 Maple–Ginger Carrot Relish (For Canning)

Yields: 5–6 half-pint jars
Tools: Hungry Artisan Food Mill (fine disc) + Hungry Artisan 8-Piece Canning Kit

Ingredients

  • 5 cups chopped carrots

  • 1 cup water

  • 1 cup apple cider vinegar

  • ½ cup pure maple syrup

  • ¼ cup brown sugar

  • 1 medium apple, peeled & diced

  • 2 tbsp fresh grated ginger

  • 1 tsp mustard seeds

  • ½ tsp turmeric (for color + antioxidants)

  • 1 tsp salt

  • Zest of 1 lemon

  • ½ cup finely chopped dried cranberries (optional but excellent for Thanksgiving)

🔧 Instructions

1. Cook the Carrots

Simmer chopped carrots in 1 cup of water for 10–12 minutes until soft.

2. Mill for Texture

Run cooked carrots through the Hungry Artisan Premium Food Mill (fine disc).
This creates a smooth base without pulp strings, a texture impossible to get with manual grating.

3. Make the Relish

In a pot, combine:

  • milled carrot base

  • diced apples

  • vinegar

  • maple syrup

  • brown sugar

  • ginger

  • mustard seeds

  • turmeric

  • salt

  • lemon zest

Simmer 20–25 minutes, stirring often, until thickened.
Stir in dried cranberries during the last 5 minutes.

4. Can the Relish

Using your 8-Piece Canning Kit:

  • Place funnel → fill jars

  • Leave ½-inch headspace

  • Remove air bubbles

  • Clean rims → apply lids with magnetic lifter

  • Tighten with jar wrench

5. Water Bath Processing

Process jars for 10 minutes.
Cool fully. Store up to 1 year.

  • Spread onto leftover turkey sandwiches

  • Serve with mashed potatoes or roasted Brussels sprouts

This relish is sweet, tangy, modern, and incredibly unique, perfect for the season.
