Zucchini season just got a whole lot more exciting! These Savory Zucchini Pickles are tangy, garlicky, and just a little bit spicy, the perfect crunchy condiment for burgers, sandwiches, and charcuterie boards.

4 cups zucchini, thinly sliced into rounds or spears

1 ½ cups white vinegar

½ cup water

3 cloves garlic, sliced

1 tbsp mustard seeds

1 tsp dill seed (or 1–2 sprigs fresh dill per jar)

½ tsp chili flakes (optional)

1 tbsp salt
1. Prep Your Zucchini:
Wash and slice zucchini into rounds or spears. Set aside.
2. Make the Brine:
In a saucepan, combine vinegar, water, garlic, mustard seeds, dill, chili flakes, and salt. Bring to a boil and simmer for 2–3 minutes.
3. Pack the Jars:
Using your Hungry Artisan Canning Essentials Kit, pack sterilized jars tightly with zucchini slices. Use the funnel and bubble remover to avoid air pockets.
4. Add Brine & Process:
Pour hot brine over zucchini, leaving ½ inch headspace. Wipe rims, apply lids, and process jars in a boiling water bath for 10 minutes.
