  • 2 medium beets, peeled and chopped

  • 2 large oranges (zest + juice)

  • 1 tbsp lemon juice

  • 1 Β½ cups sugar

  • 1 cup water

Instructions:

1. Roast the Beets:
Preheat oven to 400Β°F. Wrap chopped beets in foil and roast for 35–40 minutes until fork-tender. Let cool.

2. Prepare Citrus:
Zest the oranges and juice them. Combine with lemon juice.

3. Blend & Simmer:
In a saucepan, combine roasted beets (finely chopped or blended), orange zest, juice, water, and sugar. Bring to a simmer and cook uncovered for 25–30 minutes, stirring occasionally, until mixture thickens to a marmalade-like texture.

4. Jar It:
Ladle hot marmalade into sterilized jars, leaving ΒΌ-inch headspace. Wipe rims, place lids, and secure bands.

5. Process:
