2 medium fennel bulbs, thinly sliced (reserve fronds for garnish)

2 crisp apples (like Honeycrisp or Pink Lady), cored and thinly sliced

1 cup apple cider vinegar

1/2 cup water

1/4 cup honey (or sugar, if preferred)

1 tsp salt

1/2 tsp whole peppercorns

1/2 tsp yellow mustard seeds

1 small cinnamon stick (optional for warmth)
1. Prep the Produce:
Using your wide-mouth funnel and canning tongs, pack fennel and apple slices tightly into sterilized pint jars.
2. Make the Brine:
In a small saucepan, combine vinegar, water, honey, salt, peppercorns, mustard seeds, and cinnamon stick. Bring to a simmer until honey dissolves, then remove from heat.
3. Fill the Jars:
Pour hot brine into the jars using the funnel, covering fennel and apples completely. Leave 1/2 inch headspace. Use the bubble remover/measuring tool to check space and release air bubbles.
4. Seal & Process:
Wipe rims clean, apply lids using the magnetic lifter, and seal. Process jars in a boiling water bath for 10 minutes using the jar grabber and wrench for safety.
