🛒 Ingredients (yields ~5 half-pint jars)

  • 4 cups ripe pears, peeled, cored, and chopped

  • 1 tbsp finely chopped fresh sage leaves

  • 2 tbsp lemon juice

  • 2 cups sugar (or adjust to taste)

  • ¼ cup honey

  • ½ cup water

  • 1 tsp grated lemon zest

  • ¼ tsp salt

Instructions

1. Cook the Pears:
In a large, non-reactive pot, combine pears, water, lemon juice, and zest. Bring to a gentle boil and simmer for 15 minutes, stirring occasionally, until pears are soft.

2. Mill for Texture:
Run the warm mixture through your Hungry Artisan Food Mill (medium disc) to remove any fibrous bits and create a smooth, velvety base.

3. Add Sweetness & Herbs:
Return the purée to the pot. Add sugar, honey, salt, and chopped sage. Stir gently as it simmers uncovered for 15–20 minutes, or until the mixture thickens to your desired consistency.

4. Jar & Process:
Using your Hungry Artisan Funnel, ladle the hot preserve into sterilized half-pint jars, leaving ¼-inch headspace.
De-bubble, wipe rims, and apply lids with your magnetic lifter.
Process in a boiling water bath for 10 minutes (adjust for altitude).

5. Cool & Label:
Cool jars for 12–24 hours. Check seals, label, and store in a cool, dark place.
