Pear & Rosemary Preserves

Delicate, sweet pears simmered with lemon juice and rosemary sprigs make this preserve beautifully aromatic and perfectly balanced. Ingredients:

4 cups ripe pears, peeled, cored, and chopped

1 cup sugar (adjust to taste)

2 tbsp lemon juice

2–3 fresh rosemary sprigs (or 1 tsp dried rosemary)

½ cup water
Instructions:
1. Cook the Pears:
In a large saucepan, combine chopped pears, lemon juice, and water. Simmer over medium heat until the pears are soft (about 15–20 minutes).
2. Blend or Mash:
For a slightly chunky preserve, mash the pears gently with a fork or potato masher. For a smoother consistency, use an immersion blender or food processor.
3. Infuse & Thicken:
Add sugar and rosemary sprigs. Simmer uncovered over low heat, stirring often, until the mixture thickens (25–40 minutes). Remove rosemary sprigs before canning.
4. Jar & Process:
Ladle hot preserves into sterilized jars using your Hungry Artisan Canning Kit. Leave 1/4-inch headspace, remove air bubbles, wipe rims, apply lids, and process in a boiling water bath for 10 minutes.
