A savory-sweet preserve that captures the flavor of roasted autumn vegetables in a jar! This Maple-Roasted Brussels Sprout Relish delivers gentle smokiness, nutty depth, and a hint of maple caramelization perfect for sandwiches, roasted meats, or holiday cheese boards.

Your Hungry Artisan Food Mill transforms roasted veggies into a rustic, spreadable texture while your 8-Piece Canning Kit keeps the preserving process clean and foolproof.

Ingredients (yields ~5 half-pint jars)

  • 1 lb Brussels sprouts, trimmed and halved

  • 1 small red onion, sliced

  • 2 cloves garlic, peeled

  • 1 tbsp olive oil

  • 3 tbsp pure maple syrup

  • ½ cup apple cider vinegar (5% acidity)

  • ¼ cup brown sugar

  • ½ tsp crushed red pepper flakes (optional)

  • ½ tsp mustard seed

  • ¼ tsp black pepper

  • Pinch of salt

  • ½ cup water

Instructions

1. Roast the Vegetables:
Toss Brussels sprouts, onion, and garlic with olive oil, salt, and pepper. Roast at 425°F for 20 minutes until caramelized and tender.

2. Mill for Texture:
Transfer roasted vegetables to your Hungry Artisan Food Mill (medium disc) and crank until you reach a coarse, relish-like consistency.

3. Simmer the Brine:
In a saucepan, combine vinegar, water, maple syrup, brown sugar, mustard seed, and red pepper flakes. Bring to a gentle simmer and cook 5 minutes to dissolve sugar.

4. Combine & Cook:
Add milled vegetables to the brine and simmer 10–15 minutes until thickened slightly and glossy. Taste for salt and sweetness.

5. Jar & Process:
Use your Hungry Artisan Funnel to ladle the relish into sterilized jars, leaving ½-inch headspace. De-bubble, wipe rims, and apply lids with the magnetic lifter.
Process in a boiling water bath for 10 minutes (adjust for altitude).

6. Cool & Store:
Let jars rest 12–24 hours, check seals, and label. The flavor deepens after one week.
