6 cups heirloom tomatoes, peeled and chopped

1 cup onion, finely diced

1/3 cup balsamic vinegar

2 cloves garlic, minced

1/4 cup fresh basil, chopped (or 2 tsp dried)

1 tbsp olive oil

1 tsp salt

1/4 tsp black pepper
1. Prepare Tomatoes:
Peel tomatoes by blanching them briefly in boiling water, then chopping. Save juices for the base.
2. Cook the Base:
In a large saucepan, combine tomatoes, onion, garlic, vinegar, olive oil, salt, and pepper. Simmer over medium heat for 25ā30 minutes, stirring occasionally, until mixture thickens.
3. Add Herbs & Jar:
Stir in chopped basil. Ladle hot mixture into sterilized jars, leaving 1/2 inch headspace. Wipe rims and seal.
4. Process:
Process jars in a boiling water bath for 15 minutes. Let cool and check seals before storing.
