Apple Cider Onion Pickles – A Sweet & Tangy Fall Staple

These aren’t your typical pickles, they’re crisp, sweet, and slightly caramelized onions bathed in spiced apple cider brine. They’re fantastic on burgers, sandwiches, or cheese boards, and they turn basic pantry ingredients into something extraordinary.

Ingredients (yields ~5 half-pints)

  • 4 large yellow onions, thinly sliced

  • 1 ½ cups apple cider vinegar (5% acidity)

  • ½ cup apple cider (unfiltered if possible)

  • ⅓ cup brown sugar

  • 1 tsp mustard seed

  • ½ tsp whole black peppercorns

  • ¼ tsp ground allspice

  • ½ tsp salt

Instructions

1. Prep the Onions:
Slice onions thin and even. Soften them by blanching in boiling water for 1 minute, then drain.

2. Make the Brine:
Combine vinegar, apple cider, sugar, and spices in a pot. Bring to a boil, then simmer 5 minutes until aromatic.

3. Pack & Process:
Use your Hungry Artisan Funnel to pack onions tightly into hot sterilized jars. Pour the hot brine over them, leaving ½-inch headspace.
De-bubble, wipe rims, and apply lids using the magnetic lifter.

4. Water Bath:
Process for 10 minutes (adjust for altitude). Cool 12–24 hours, check seals, label, and store.
