Prevent Cracked Jars in the Canner

Cracked jars are one of the most frustrating things in home canning. You’ve prepped, filled, and sealed… only to hear that dreaded clink as a jar breaks in the water bath. The good news? It’s easy to prevent with one smart technique: the Staggered Load Method.

Why Jars Crack

The most common cause is thermal shock: adding cool jars into boiling water or pulling hot jars into cold air. Glass expands and contracts quickly, and if the temperature change is too fast, jars break.

How to Use the Staggered Load Method

  1. Stage Jars Properly

    • Always keep jars hot before filling (your oven at 200°F or simmering water works).

    • Fill jars one batch at a time and keep them on a towel to avoid cold counter shock.

  2. Stagger Placement in the Canner

    • When adding filled jars to the boiling water bath, don’t put them all in at once.

  3. Equalize Before Removing
